There’s fire. There’s smoke. There’s meat.
But there’s a whole lot more going on than throwing a burger on a grill and hoping for the best.
What we do is about time, temperature, patience and flavour. It’s about understanding the meat, respecting the process and knowing that sometimes, the best things in life simply cannot be rushed.

Our cooking starts long before the food hits your plate.
We cook our meats low and slow over fire, giving them the time they need to develop deep, rich flavour and that unmistakable smoky character.
And we mean slow.
There’s no set-it-and-forget-it approach here. We’re constantly watching temperatures, checking the meat, managing the fire and making adjustments as we go. Because a piece of meat doesn’t care what time we planned to serve it. It’s ready when it’s ready.
That might mean hours of cooking, careful monitoring and plenty of patience. It’s a process where small changes in temperature, airflow, smoke and time can make a huge difference to the final result.
And that’s where the magic happens.

fire is the
ingredient.
We love cooking with fire because it brings something you simply can’t recreate in a kitchen.
The heat, the smoke, the char and the natural variation of live fire all become part of the food.
But fire needs managing.
Too hot and you lose the tenderness we’re looking for. Too cool and you lose momentum. Too much smoke and it can overpower the meat. Get it right, though, and you get something seriously special.

THE SCIENCE BEHIND THE SMOKE.
Low and slow cooking isn’t just about waiting around.
There’s some pretty clever science happening along the way.
As meat cooks slowly, connective tissues gradually break down, fat renders and moisture moves through the meat. The longer cooking time allows flavours to develop and those beautiful smoky, savoury notes to build.
We monitor the temperature throughout the cook because a few degrees can make a big difference.
We’re looking for that point where the meat is beautifully tender without losing everything that makes it worth eating in the first place.
It’s part science.
Part instinct.
And, if we're honest, a little bit of obsession.

WHY DOES IT COST MORE?
Because good food takes time.
And time is one of the most expensive ingredients there is.
When you buy from us, you’re not just paying for a burger, a bun and some sauce.
You’re paying for the hours of preparation.
The meat.
The fire.
The fuel.
The monitoring.
The testing.
The batches that didn’t quite make the cut.
The recipes we keep tweaking until we’re genuinely happy with them.
And all the time spent making sure that what lands in your hands is something we’re proud to put our name on.
We could do it faster.
We could do it cheaper.
But it wouldn’t be our food.
We'd rather serve you something we've taken our time over — something with depth, character and flavour that you can actually taste.
We think that’s worth paying a little more for.

MADE FROM SCRATCH.
We don't just buy everything in and put it together.
We make our own bread rolls, develop our own sauces from scratch and constantly experiment with new combinations, flavours and ideas.
Some become firm favourites.
Some get sent back to the drawing board.
And some are so good they end up becoming part of the menu.
We’re always looking at what’s next — new flavours, seasonal ingredients and different ways of cooking over fire.
Because standing still isn't really our thing.

AND WE'RE ALWAYS EXPERIMENTING.
Our menu will evolve with the seasons.
When there’s something brilliant around, we want to use it.
When we discover a new flavour combination that makes us stop and go “ohhh, that works…”, we want to share it.
So while there’ll always be the things you come back for, there’ll also be something new to discover.

GLUTEN FREE?
We know that eating out isn't always straightforward when you're gluten free.
So we try our absolute hardest to make sure there are options for you too.
We make as much as we can ourselves, and we're continually looking at our ingredients, recipes and processes to find ways of making more of our food accessible without compromising on flavour.
Because nobody should have to settle for the boring option.
